- Sweet Potatoes
- Olive Oil
- Rosemary, minced
- Green onion, minced
- Applewood Smoked Bacon
1. Chop the sweet potatoes into 1" pieces. Either boil or steam them just until a fork can be inserted easily. Toss the sweet potatoes with olive oil, coarse salt, pepper, green onion and rosemary.
2. Line a sheet pan with foil. Wrap each chunk of sweet potato in 1/2 a slice of bacon, insert a toothpick to hold the bacon in place. Place on baking sheet.
3. Bake for 10-15 min on one side, then flip, and 10-15 on the other side. Bake until golden brown.
