Sauteed Spinach with Garlic and Pine Nuts
2 teaspoons olive oil
2 Tablespoons pine nuts
2 cloves garlic, minced
1 10 ounce package fresh spinach, rinsed will and stems trimmed
2 teaspoons balsamic vinegar
1/4 teaspoon fresh ground black pepper
1. Heat oil in a large non-stick skillet over medium heat. Add pine nuts and saute 1 minute. Add garlic and saute 3 more minutes, or until pine nuts and garlic are both golden.
2. Add spinach, cover and steam 1 minute, or until wilted. Remove from the heat and stir in the vinegar and pepper.
