Pecan Pie Cupcakes


Ingredients
  • 1 Cup chopped pecans
  • ½ Cup all-purpose flour
  • 1 Cup packed brown sugar
  • ⅔ Cup butter, melted
  • 2 eggs

Preparation

1. Preheat oven to 350-degrees F. Add muffin liners to muffin tins  or spray tin with cooking spray; set aside.

2. Combine all ingredients and mix well; fill each muffin cup 2/3 full. Bake 18 to 22 minutes or until golden brown.

Makes 13-14 regular-sized cupcakes, or about 30 miniature ones.
