Fried Corn with Smoked Sausage



Ingredients
  • 2 Tablespoons butter
  • 2 Tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 pound smoked sausage, cut into 1" pieces
  • 1 16 ounce package frozen corn kernels
  • 1/2 salt
  • 1/8 teaspoon black pepper
  • 1/4 cayenne pepper 
Preparation
 
1. Melt the butter in a large, deep skillet over medium-high heat, add the olive oil; stir to combine.

2. Add the onion, peppers, garlic and sausage and cook until hot.

3.  Add the corn and reduce heat to medium; cover and cook until the corn is tender, 5-7 minutes.

4. Season with salt, black and cayenne pepper. Toss to combine.  Serve hot.

Serves 4
