Ingredients
- 2 pounds peaches, peeled, pitted and thinly sliced
- 1/2 Cup light brown sugar
- 2 1/4 Cups flour
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 13 Tablespoons butter
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1 Cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 Cups sour cream
Preparation
Heat oven to 350 degrees.
1. Cook brown sugar in 5 Tablespoons butter in 10 inch ovenproof frying pan until dissolved.
2. Turn off the heat, arrange peach slices in pan.
3. Combine flour, baking soda, salt and spice. In a separate bowl combine 8 tablespoons butter with granulated sugar. Beat in egg and vanilla. Stir in flour by thirds, alternating with sour cream. Spread over peaches and bake until toothpick inserted in center comes out clean, 50-55 minutes. Cool for 10 minutes in pan on a wire rack. Place a plate upside down on top of cake, and invert onto plate. Serve warm with vanilla ice cream.
