Mom's Fried Rice



Bacon and eggs are wonderful in fried rice. This is a great way to used leftover rice. This good for breakfast, lunch or dinner.

Ingredients
  • 6 slices bacon, chopped
  • 2 cloves garlic, minced
  • 2 eggs, lightly beaten
  • 3 Cups cooked rice, cooled (leftover rice is great for this)
  • 4 green onions, sliced
  • 3 Tablespoons soy sauce
  • a couple dashes of sesame oil (optional)
  • crushed red pepper flakes (optional)
Preparation

Heat a large skillet or wok. Add bacon and garlic, cook stirring constantly, about 3-4 minutes or until bacon is crisp. Do not let the garlic burn. Add the green onions and stir until heated. Remove bacon, onions and garlic to a plate covered with a paper towel. Set aside.

Add the rice to the bacon dripping in skillet or wok. Toss well to mix thoroughly. Add soy sauce, sesame oil, crushed red pepper, salt and pepper to taste. Add bacon, garlic and green onions. While still very hot add the beaten eggs. Remove from heat and continue stirring. The heat of the rice will cook the eggs.
